Many fillet knives feature a quality stainless steel blade and a decent amount of flexibility.  Fillet knives should be sized appropriately to the protein that you plan to cut. I make different styles of fillet knives featuring short and thin blades used for smaller fish and precision cuts as well as larger stiffer knives with thicker blades for heavier filleting tasks. Like all my knives, these fillet knives feature excellent edge retention and durability.
